Here’s what’s got me so excited:

  • increased nutrient/vitamin levels
  • increased bioavailability of nutrients
  • easier on the system–body digests it as a vegetable  (not a grain)
  • all the benefits of whole grain without the more bitter taste
  • ACTS GLUTINOUS — stretchy pizza dough, fluffy cakes….!!!

I feel some baking coming on! I’ll let you know how it turns out….
